Winter 2011
As many of you know, The Meridian Club is not a "cookie cutter" resort. We pride ourselves on retaining the old Caribbean
feel - low key, unhurried, comfortable and safe. One of the few places left where you can often have a 2 mile beach to
yourself and not worry about locking the doors at night.
We've steadfastly resisted the temptation to expand our resort or mimic the latest decorating trends. If you are looking
for Asian décor, infinity pools, artificial waterfalls or jet skis, you won't find them here. Sometimes, we believe, it's
good to stay the same, especially when you are different than all of the rest.
The exceptionally cold winter weather up north, along with an improving economy, has prompted more Caribbean travel
this season. We've just finished a very busy February and early March and April looks to be another busy month.
Thank you to everyone who came out to celebrate the holidays with us. The theme for New Year's Eve was a big hit.
Read more about it below.
We hope you have a wonderful spring and hope to see you sometime soon!
Warm regards,
Bev and Wally Plachta

| New Years Eve

Always a big event at The Meridian Club. However, most everyone thought last year's "Pirates of
the Caribbean" party, featuring costumed swashbucklers, cannons and a large model of a pirate ship patrolling the swimming
pool, would be impossible to surpass.
Enter this year ... the "Titanic" party. Supremely talented homeowner Jack McWilliams fashioned a 10 foot model of the
ill-fated ship which could have fooled James Cameron and dutifully sank in the swimming pool at midnight after colliding
with a Styrofoam iceberg.
Guests dressed in the fashion of the day (one not-so-gallant man came wearing a life vest) and individual bottles of
"Titanic Champagne" were served with dinner. Following a spectacular fireworks display, a bevy of Pine Cay beauties
performed a song and dance routine that left the audience speechless and probably will never be duplicated anywhere
in the Caribbean.
Plans have already begun for next year's party, which will have a "Western" theme. Probably no dance hall girls though.
Those who performed this year complained of unwelcome advances. Some guests obviously overdid it with the champagne.

| Amy is a Winner

Readers who have sampled the wares of our talented Pastry Chef, Amy Caffarel, over the past
two years, will definitely endorse that statement. However, it was reaffirmed on a bigger stage in February when she
entered a culinary competition featuring the best executive and pastry chefs in the Turks and Caicos, almost all of
whom hailed from high end hotels and restaurants on Providenciales.
Entries included a mouth watering assortment of finely prepared appetizers, entrees, side dishes and desserts.
Our little Amy not only won the judges' nod for top dessert, but her delicacies - rose water panna cotta with strawberries
and champagne gelee and milk chocolate mousse with pecan, peppercorn and caramel - were adjudged best entries of the
entire contest. We can't say we were surprised.
By the way, over the past 6 months, Amy has also been teaching a young TC Islander who works in our kitchen to read
and write in her spare time. The young man is making excellent progress and we are just as proud of Amy for this effort
as for her professional achievements.
Other Culinary Talent
Then there is our Executive Chef, Shane Coffey, who is no slouch himself, even when it comes to desserts. Check out this
article from Epicurious.

| Early closing
Just a reminder that we expect to close June 30th this year to provide sufficient time for our
pool and pool deck rehabilitation project. Next season we will resume our usual schedule, opening November 1st and closing
for the summer on July 31st.
This means, unfortunately, that June will be our only "family month" this year and it is rapidly filling in with
reservations. We still have limited availability then and a fair amount in May.

| Less expensive travel

Jet Blue and Continental have now begun direct flights to the
Turks and Caicos from New York and Boston (Jet Blue) and Newark (Continental). The additional competition has already
had a salutary effect on airfares charged by other carriers.
You'll find that the cost from most east coast U.S. cities has dropped by as much as several hundred dollars for many
travel dates.

| Real estate opportunities
There are
several properties currently for sale on Pine Cay. They include two homes on the channel,
one fronting on the ocean, one on an interior pond and an undeveloped parcel on an interior pond.
Each has its own unique attributes and all carry the right to membership in the Pine Cay Homeowners Association for qualified
purchasers. Members of the Association have full access to Meridian Club facilities and services.
Development on Pine Cay is strictly limited and properties turn over infrequently. This is a rare opportunity to select from
several that are available. Further information can be obtained by e-mailing manager@meridianclub.com.
